Servings

Ingredients

  • 1 cup Celery Chopped
  • 1 cup Onion Chopped
  • 1 cup Carrot Chopped
  • 1 cup Kohlrabi Sliced into 1 inch pieces
  • 2 cups Kale Chiffonade (cut into strips)
  • 2 cups Brocolli Chopped
  • 1 teaspoon Oregano - dried (1 Tbs fresh)
  • 1 teaspoon Basil - dried (1 Tbs fresh)
  • 1 teaspoon Rosemary - dried (1 Tbs fresh)
  • 1 teaspoon Salt to taste
  • 1/2 teaspoon Pepper to taste
  • 4 cups Chicken broth (Vegetable broth for vegetarian)
  • 1 cup Tomatoes - canned crushed

Directions

  • Combine all vegetables in broth and tomato mixture and bring to a simmer.
  • Add  Salt, Pepper and spices.
  • Simmer for 30 – 45 minutes till vegetables are tender.
  • Taste and adjust seasoning.
