Ingredients
- 1 cup Celery Chopped
- 1 cup Onion Chopped
- 1 cup Carrot Chopped
- 1 cup Kohlrabi Sliced into 1 inch pieces
- 2 cups Kale Chiffonade (cut into strips)
- 2 cups Brocolli Chopped
- 1 teaspoon Oregano - dried (1 Tbs fresh)
- 1 teaspoon Basil - dried (1 Tbs fresh)
- 1 teaspoon Rosemary - dried (1 Tbs fresh)
- 1 teaspoon Salt to taste
- 1/2 teaspoon Pepper to taste
- 4 cups Chicken broth (Vegetable broth for vegetarian)
- 1 cup Tomatoes - canned crushed
Directions
- Combine all vegetables in broth and tomato mixture and bring to a simmer.
- Add Salt, Pepper and spices.
- Simmer for 30 – 45 minutes till vegetables are tender.
- Taste and adjust seasoning.
