Ingredients
- 4 quarts Chopped Mustard greens stripped from stem
- 3 tablespoons Olive Oil
- 1/2 cup Sliced onion
- 2 ounces Pancetta
Directions
- Strip Mustard greens from the stalk with a sharp knife
- Chop into rough strips and pieces
- Saute pancetta and onion in olive oil till turning brown
- Add greens and toss and turn till wilted. Other types of greens such as collard, turnips and kale can be prepared the same way. They may not wilt as quickly and may take a bit more time to cook till tender.
