Ingredients
- 1 tablespoon Extra Virgin Olive Oil
- 1/4 cup Red Onions, minced
- 1 clove Garlic, minced
- 1 14 oz. cans Tomatoes, Diced in juice
- 2 6-8 oz fillets Tilapia
- 1 pinch Kosher salt (to taste)
- 1 pinch Black Pepper (to taste)
- 2 teaspoons Parsley, finely chopped (or other fresh herb)
Directions
- Heat a sauté pan
- Add the olive oil, onions and garlic
- Sweat for 3 minutes
- Add the tomatoes, bring to a simmer
- Season the tilapia fillets on both sides with salt and pepper
- Add the fish to the ‘crazy water’, covering with sauce
- Cover, allow to simmer until fish is cooked (about 7-10 minutes)
- Finish with fresh herbs
