Ingredients

  • 1 tablespoon Extra Virgin Olive Oil
  • 1/4 cup Red Onions, minced
  • 1 clove Garlic, minced
  • 1 14 oz. cans Tomatoes, Diced in juice
  • 2 6-8 oz fillets Tilapia
  • 1 pinch Kosher salt (to taste)
  • 1 pinch Black Pepper (to taste)
  • 2 teaspoons Parsley, finely chopped (or other fresh herb)

Directions

  • Heat a sauté pan
  • Add the olive oil, onions and garlic
  • Sweat for 3 minutes
  • Add the tomatoes, bring to a simmer
  • Season the tilapia fillets on both sides with salt and pepper
  • Add the fish to the ‘crazy water’, covering with sauce
  • Cover, allow to simmer until fish is cooked (about 7-10 minutes)
  • Finish with fresh herbs
